An Ampersand anywhere in the text prevents MultiMarkdown Composer 2.8 and Beta v3 from creating an ePub. The message is:

"This file could not be exported to a valid ePub. It is likely that the HTML was not valid (are CriticMarkup changes present?)."

This problem is NOT fixed despite what this says: http://support.fletcherpenney.net/discussions/problems/72-image-caption-and-ampersands

Sorry for the delay in this, but perhaps you could send me the file you're having trouble with.

Ampersands work just fine for me.
